1 ounce Gin, preferably Nolet Silver Gin
1/2 ounce freshly squeezed lemon juice
1/2 ounce simple syrup, preferably Barsmith
1 dash orange bitters
3 ounces sparking wine, preferably Moet & Chandon Imperial
1 lemon peel, for garnish
Add gin, lemon juice, and simple syrup to a shaker with ice. Shake for 15 seconds and strain into a chilled coupe or flute glass. Top with the sparkling wine. Express the lemon peel, drop the peel in the glass and enjoy.
